Peach Pear Ginger Crisp
Filling:
4 peaches, sliced
4 pears, sliced
2 limes, squeezed
1T. grated ginger root
1/4 c. date sugar
Topping:
2 c. almond meal
1/2 c. raisins
2/3 c. grapeseed oil (or other oil)
1 t. cinnamon
1/4 t. allspice
1/4 t. ground ginger
1/2 c. date sugar (or honey; if you use honey don't add almond milk)
1/4 c. almond milk
Mix all filling ingredients and place in 9 by 13 pan. Mix topping ingredients in food processor and crumble over filling.
Bake at 350* F for 20 mins covered, and then, uncovered for another 10 mins or until crust is lightly browned and fruit is soft.
This recipe is Gluten free, Dairy free, Sugar free, and Starch free. Surprisingly, without all that yummy-ness it's still very delicious!! :)
Serve plain or with whipped cream.
