2 can chickpeas
1 avocado
1/2 onion
1/2 lime
1/4 c. olive oil
1 Tablespoon apple cider, red wine, or white wine vinegar
1/2 teaspoon sea salt
Drain and rinse chickpeas in colander. Pour chickpeas into medium mixing bowl. Cut avocado in bite size pieces and add to bowl. Squeeze lime juice into bowl. Add olive oil, vinegar, and sea salt. Mix ingredients.
Serve over bed of lettuce drizzled with olive oil.
