Maundy Thursday


This was the day my Lord was handed over to the people. He did not ask to avoid the suffering, but embraced it after much sorrow.  He gave himself up so that we might have life, and life in abundance.  Praise the Lord! For the second time, since the beginning, he gave us the ability to live on this earth in joy. And heaven awaits us.

Of Becket and Mangoes




My week has been a medley of endeavors. Take a picture of those beautiful mangoes before they have to be cut. Make a pig costume for Easter Vigil. Practice Kabalevksy. Look at Becket! Before I take the laundry down to the basement, I must take a picture of him in that sunlight. Shouldn't I wash those dishes?

Banana Muffins


These banana muffins have become a regular at our house. My brothers really loved them for a while, but now I think they are just polite.  That is just fine with me; I love them!



Banana Muffins

4            Bananas
3            Eggs
1 T.       Vanilla
1/4 c.     Grapeseed or Coconut or Vegetable oil
2 c.        Almond flour (or the wheat flour of your choice)
1/2 tsp.  Sea Salt
1 t.        Baking Soda  

Mash bananas and mix in eggs. Add vanilla and oil. In a separate bowl, mix the dry ingredients: flour, salt, and baking soda.  Bake at 350 degrees F for 15-20 mins. 

Recipe Notes:

~If you have a cuisinart mixer, you can mix bananas and other wet ingredients and then add the   combined dry ingredients for an even faster venture!

~I suggest leaving bananas pretty chunky, well, not too chunky, but don't let them become a liquid, or       the texture of the muffins is different. 

~If you desire, putting slices of banana on top improve the stature of the muffin.

Morning in the Kitchen


This morning I came down to sun in the kitchen. How refreshing it is to see sunlight after so many days of winter dreariness! The early birds, Nathanael & Christian, were making their toast while I took a few snapshots of them. Okay, I know I'm biased, but aren't they adorable? It was actually pretty quiet until the others awakened. Really.
